Does anyone know if these outdoor showers (or a similar type) would be durable enough to stay outside for about 6 months at a time? I’m thinking of using it to connect to mains water for outdoor shower at home but would only use it for warmer months. Unsure if the components inside the unit would hold up to rain / UV exposure?

This style of portable camping shower is designedfor temporary outdoor use, such as camping, caravanning or occasional off-grid washing. They are built to be set up when needed and packed away after use, rather than installed as a semi-permanent fixture.
The instruction manual, which can be found here - ThermoMate Gas Water Heater with Pump Instruction Manual - states that it is "Not for permanent installation. Do not connect to fixed gas or water piping".

Based on the manufacturer’s instructions, leaving the unit installed outdoors for extended periods or integrating it into a mains-connected outdoor shower setup would not be possible.
Unfortunately, you would need to speak with a licensed plumber for their assistance in installing a system that is up to the standards required.

Do you know of an electric instant hot water system that doesn’t have a tank but could be used for hot water for the shower? I could build the shower on the outside of a shed that has electricity so maybe use electricity instead

Rheem has the Rheem Eclipse - 18kW 3 Phase Continuous Flow Electric Water Heater, which we could order. However, due to its IP25 weather rating, it is only suitable for internal use.
