What should I use to fix these cracks that appeared in different rooms of my house. Would the Gyprock multipurpose joint compound and fibreglass mesh tape be good to fix the cracks in the walls and ceilings? Or do you recommend other products?
Some cornices are cracking too. Would I need nail it fast cure and a gap filler to fix those cracks?

If you'd like to simply cover the cracks, then the Less Mess Multi-Purpose Joint Compound and Mesh Tape would be fine. With the cornice, you would just need to apply a gap filler such as No More Gaps to cover the fine cracks.
These products would be suitable for an aesthetic repair, but they will not fix the underlying cause of the cracking, which I suspect is due to the movement of the ceiling caused by the garage door.
If the ceiling was not framed to add additional support for the garage door, then it is likely that the trusses or ceiling battens are shifting slightly when it is in motion, which would cause the cracking.
If you'd like to make the repair last long term, I'd suggest contacting a carpenter for assistance reinforcing the ceiling framing to ensure the cracking does not return.
