How can I fill this gap between plasterboard and window frame?

Thank you for sharing that photo of your door frame gap. Due to the size of the gap, I suggest using 31 x 11mm 5.4m White Moulding Pine FJ Primed DAR as a trim all around the door frame. It can either be screwed on or glued onto the wall. You can use Selleys 420g Liquid Nails Fast Grab Strong Adhesive in combination with Zenith 6G - 18 x 30mm Needle Point Gold Passivated Plasterboard Screw - 100 Pack. My best advice is to drill pilot holes in the timber moulding to prevent it from splitting.

Do you have a video of what this would look like please? Also, won't the side of the window frame where the moulding will be fixed look off?

You do have the option of removing the old architrave around the door so that you can replace it. Installing the timber moulding is just an immediate fix without taking the architrave assembly apart.
