I've already painted the walls white. The toilet is in good condition but definitely need a new vanity. Those floor tiles have to go as well and, if possible, a more modern shower.

Yes you can! Hower please be aware that tiling over existing tiles carries its own set of challenges. The bottom of the door will have to be cut down to adjust for the increase in floor height. The drains will have to be adjusted. You either tile around the toilet or lift it and adjust. Goodluck and stay safe!
