I have a 2 bowl Kitchen sink that has the usual pipework underneath.
I'd like to, using parts like these:

to split the waste underneath into a 3 part waste and to split the hot and cold water to make a coffee station in my lounge room in a built in cabinet.

My question is, is this allowed/ would this be okay/how would this be done in a new build house?

Just a friendly reminder that any plumbing work needs to be carried out by a licensed plumber for safety and compliance.
Generally speaking, your idea is definitely possible. But I suspect that a plumber would run the plumbing underneath your cabinetry to avoid cutting into your cabinet walls. They would use copper pipes and brass fittings to create the water extension and PVC pipes for the wastewater. Although the parts you mentioned would possibly work, its not how a plumber would arrange the fittings and should any catastrophic leak occur, it would not be covered in your insurance.
