What laquer for shou sagi ban table?

What laquer / top coat do I need for DIY shou sago ban table I’ve made.

Don’t want it glossy.

If the surface of the table has been cleaned and there is no more debris from the process, I suggest looking at the Feast Watson 250ml Matt Clear Varnish or the Cabot's 250ml Matt Water Based Cabothane Clear Polyurethane. My best advice is to sand lightly (fine grit) between coats to remove the raised grain. Thin coats are better than thick coats. Multiple thin coats give durability without buildup. Let each coat dry fully, follow manufacturer’s recommendations for recoat.

What about an epoxy finish? Which epoxy should I use?

When you say epoxy are you referring to a resin poured cover? If you are, I propose looking at the Boyle Crafty Resin 1L (500ml+500ml) Kit. It will be necessary to get more of the crafty resin especially if you are trying to cover a very long and very wide table.
