It looks like as soon as you use the bar to try and pull the door open the whole thing will just separate? What am I missing?

Just to start with, is this a recently purchased handle? If so, are you aware of the specific handle that you've purchased?
There will oftentimes be drawings or a manual showing how these parts interact that could help us.
I can't say I'm 100% certain, but based on what I am seeing, the screw at the back of the cover plate will go through the door to hold the cover plate on the door, and it seems likely that the three lugs on the actual handle will somehow be involved in how it is attached to that cover plate.

Is it possible to get a photo showing the front side of the cover plate, showing the location that lines up with these lugs?
Are there any slots in the cover plate that line up with them?
Does it maybe sit into some slots, then rotate in place?
I'll wait for your response and then assist further.

It's not recently purchased and yes there are slots that line up but nothing that seems to lock it in place. Cannot rotate?

I can't say I've seen a cabinet handle like that, and there doesn't seem to be anything obvious that would lock the handle in place.
How does the screw interact with the cover plate?
Is there anything on the backside of the cover plate that might lock into those lugs?
Do you have any other handles in your home that are already installed that we might be able to inspect?

Ive seen them before but for the past 20mins I have been looking for them and for the life of me cant find one 😕
Going through your photos I am wondering what the backside of the base looks like? Also as @JacobZ has asked if you have any other handles like this?
I wonder if when the screw is done up with the handle attached, some interior mechanisim then locks those pins in. Could you try winding the screw up without it being attached to a door to see if it does anything on the inside of the underside?
