Looking for recommendation what is the best way possible I can replace the garage door brace with thinner/flat bar?

I am assuming that the bar is going to interfere with something you planning to do? But to all the points @MitchellMc mentioned, its highly inadvisable you make any changes to the garage door construction. Even a very thick steel bar not only will be heavier, it can still easily bend/flex. This against a relatively light gal steel "V-Shape" will never alter in shape maximising the support required.
