Hi
I am renovation a kitchenette and need to remove the backsplash tiles or cut the plasterboard where they are and replace it. I am struggling to remove the tiles without damaging the plasterboard. I am also finding the section of plasterboard behind the tiles above the sink give off a musty damp smell as I am pulling off the tiles. Would it be better to cut out the piece of plasterboard where the tiles are sitting and replace it with something more waterproof, rather than trying to remove each tile?
I intend to install a backsplash once the new cupboards are in, although not necessarily a tiled backsplash.
The tiles currently have a plastic fake tile look adhesive stuck to them.
Just need advice on whether to forge on or just cut out the section of wall and replace it?

Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about your backsplash.
Having done a few renovations, I propose using a Trojan 150mm Jab Saw and removing the plasterboard along with the tiles. I believe that it is much easier to replace the plasterboard rather than spending time patching, sanding re-levelling the damaged plasterboard surface. The new panel can then be put in, and the joints can be fixed with standard plastering repair methods.

Last year I had to do exactly the same project for a client. I can assure you that the easiest is to not try and save the plasterboard. For the sake of $15 a sheet, just pull out the old and replace with new

Cut and replace
I agree with both @EricL and @Nailbag. Its not worth the effort to try and go softly softly. I tried taking it easy when I did my kitchen... Then had to replace the plaster anyway.
