Welcome to the Bunnings Workshop community @nicolel7. It's a pleasure to have you join us, and many thanks for your question about changing a tap washer.
That's a fairly unique tap style. I suspect that unscrewing the section highlighted in red will reveal the inner workings. However, to get that section off, you'll probably have to unscrew the pin lever handle marked in blue first. Remember to turn your water off at the mains or under the sink first before you undo these items.
If you can't unscrew the section in red by hand, make sure to wrap a cloth or several layers of masking tape around it before using any tools, as they will scratch the chrome badly.
