I'm using merbau for some shelves in my kitchen. Will it leak tannins if it doesn't get wet? Just wiped down every now and then?
The shelves are up against a brand new tile splashback and I'm worried it's going to stain the tiles

It appears to be dry and does not look like tannins will be leaking out any time soon. For indoor merbau shelves that appear dry, you likely don't need to worry as much about tannin bleed, especially if they aren't exposed to moisture. Tannins are more of a concern with freshly cut or outdoor timber, as they're more likely to leach when exposed to rain or humidity. However, it can still be a good idea to give them a light clean before finishing, as this removes any residual dust, oils, or residues from the manufacturing process.
A gentle wipe-down with a slightly damp cloth or washing them with a dedicated timber cleaner like Cabot's Deck Clean should be sufficient. If you're planning to oil, stain, or seal the shelves, this step also helps the finish adhere better. Just make sure to let them dry thoroughly before applying any coating.

The timber will retain its natural colour and be far easier to clean with no concern of leaching or stains if you give it a coat of a benchtop oil like this one. The same oil can be used on your timber benchtop. It's easy to apply and dried very quickly.
