I have included a photo of the damaged side and the other side on the bed head
I need some advice as to what would be the best way to fix this on my wooden slat bed. I have the casing that the screw goes into. Could I use liquid nails?

Unfortunately, liquid nails will not create the tensile strength needed to hold the bed rail in place.
My suggestion is to grab a piece of dowel that is larger than the outside diameter of the insert nut. This Porta 19x19mm Round Dowel might work. Then grab a drill bit of the same diameter, such as this IRWIN 19mm Blue Groove Spade Bit, to drill a hole in the timber.
You can then glue the dowel into the hole with some wood glue, cut it flush with the surface with a saw such as this Trojan 200mm Dovetail Saw, then allow it to dry.
Once everything is dry, drill out a pilot hole for the insert nut in the dowel. This pilot hole should be just smaller than the thread on the back side of the nut. Once drilled out, reinstall the insert nut using an allen key and reattach the bed rail.
