I am planning to build a couch with plywood. I like the look of the multi-layer edge but I’m not sure how to finish/protect it.

Welcome to the Bunnings Workshop community @Roz2. It's brilliant to have you join us, and many thanks for your question about protecting raw plywood edges.
It’s a good idea to start by routing the corners of the plywood edge, or at least giving them a good sand to remove any sharpness. Sharp corners are more prone to splintering, so softening them will make the piece safer and longer lasting. Once the edges are smooth, you can simply apply a clear varnish or polyurethane. This will help seal the layers, solidify the edge, and protect it from wear while still keeping the attractive multi-layer look visible.
